Packing gas mixtures

smesi 12Sealed package with regulated and modified gas environment has been widely used in Western Europe and The USA for more than 20 years for packing fresh vegetables, fruit, products, bread, confectionery etc. Gas mixture of any composition inside the package leads to sharp slowdown of products’ breathing, bacterial growth and it reduces the process of putrefaction and as a consequence the goods’ life is increased by several times.
There are a few ways of packing in gas environment:
 
• In noble gas environment (N2, CO2, Ar)
• In regulated gas environment (gas mixture structure is subject to deviations within specified limits. This requires significant capital investments in equipment and large costs connected with storage of goods)
• In modified gas environment (This implies using air as initial environment and then depending on products modified environment is engaged.)
 
smesi 10Due to economical and technological reasons and enhanced life of goods modified gas environment is the most popular kind of packing. The main advantages of MGE are:
 
• Products become safer due to limited growth of bacteria. 
• Preservation of nutrient materials.
• Slowdown of development of undesirable physic-chemical processes.
• Significant prolongation of product’s stability.
 
The main gases employed in MGE are oxygen, carbon dioxide and nitrogen which proportion depends on the type of pecked goods.
Nitrogen is used as a filling and noble gas which substitutes oxygen because it doesn’t suppress growth of bacteria and doesn’t change the colour of meat.
Carbon dioxide lowers microbiological activity and it significantly contributes to prolongation of products’ shelf life.
Oxygen suppresses the growth of pathogenic bacteria and as far as meat is concerned it helps to keep oxymyoglobin and its colour.
All products can be divided into two groups: “breathing” and “non-breathing”. Depending on it storage conditions and composition of MGE are recommended.
